How to prepare:

-Allow the oven to be heated to about 400 degree F.

-in the oven pour 1 tablespoon of oil in the 12 inch skillet and allow it to be heated to medium. Now put the beef and leave it to bake for 3 minutes or bake until you notice it is turning brown. Get a spoon to scoop the beef into a bowl, drain extra fat that may be there. Add the sliced onions and pepper into the skillet, stir and cook for 7 minutes. The next on the list is to add the garlic, chipotle and chili powder, keep stirring  properly and cook for 2 minutes, pour the beef back into the skillet, add the tomatoes, beans and 1/2 teaspoon of salt, cook this until it gets hot or you can cook it for 3 minutes. After this, take it off the heat.

-Get a bowl, pour the cornmeal, flour, baking powder and 1/4 teaspoon salt, and stir all together properly. Get another bowl, add the egg, milk and the 3 tablespoons of oil that is left into the bowl, whisk properly then pour it into the cornmeal stirring gently. Take half of the Serrano chiles fold it into the batter, then pour to the batter, spreading it unto the beef so as to cover it. On the surface, place dots of Serrano on it.

-Ready to bake: you should put the skillet back to the oven, bake it until it becomes thick and solid for about 25 minutes. Take it out of the oven and allow it to cool for 10 minutes. Then you can garnish it with cilantro.

DOUBLY CHEESY MEATBALL BAKE: this meal takes about 15 minutes to prepare and 1 hour 30mins to bake, which brings it to a total of 1 hour 45 minutes. Here are it’s ingredients:

-2 lb. ground lamb or beef chuck (80% lean)

-2 c. packed torn crust less stale of white bread

-1/2 c. crumbled feta cheese

-3 cloves of garlic that is crushed with press

-1/3 c. finely chopped fresh mint, keep more for garnish

-1 tbsp. extra virgin olive oil

-1 finely chopped medium onion,

-1 can “28 oz.” of crushed tomatoes –

-1 c. of lower-sodium beef or chicken broth

How to prepare:

-Heat the oven before you bake, heat it to 375 degree F. You need a large bowl here, put the bread in it and soak it in cold water for 20 minutes. After 20 minutes, squeeze out water from the bread, ensure there is no excess water in it, put it in a bowl.

-In the bowl, add the mint, feta, garlic and 1/2 teaspoon each of salt and pepper, stir well until it is properly mixed together. Now put the lamb, keep mixing, and ensure you mix it perfectly so that all parts can be properly covered. Then carve it into 12 meatballs of 2 inches each.

-You need a cast iron skillet of 12 inch, add oil to the skillet and heat it to high-medium. Drain extra fat away from the frying pan, leaving thin coating. Scratch off the brown part and reduce the oven’s temperature to medium. -6 ounces of shredded Cheddar, it should be about 1 1/2 cups

How to prepare:

– allow the oven to be heated to 400F before baking. Put a baking sheet with parchment paper on a table. Slice the squash in half crosswise and take out the seeds. Place the open part of squash down and bake for about 40 minutes until the squash becomes very soft to be squeezed.
